Really? It’s December already? What the….?
So, it kind of feels like cheating, but I’m submitting Thanksgiving leftovers, three ways, for this week’s Dark Days entry. I have to say, cooking a big meal really does pay off in terms of all the time I saved using leftovers this last week! We did finally have to cry “uncle,” though and freeze the last hunk of meat. It’ll make a great pot pie in a week or so, but we just couldn’t face anymore turkey for a while
Most of the ingredients in these meals are from Thanksgiving, which I outlined last week. Those ingredients from away are noted after each picture.
#1 Soup

- Don’t forget to use that carcass for a super stock (simmer with onion, carrot, celery, bay, pepper, etc.).
- Sautee onion, celery, carrot and garlic in olive oil.
- Add stock and bring to a simmer, along with any leftover herbage you might have.
- Add rice, simmer until cooked.
- Add chopped turkey, heat through.
- Enjoy.
- From away: oil, organic celery, rice, bay leaf, S&P
#2 Bubbles & Squeak



- Mix leftover, chopped turkey, mashed potoates and stuffing (the amounts aren’t so important here – just so the mixture is sticky enough to form patties).
- Form into burger-sized patties.
- Dredge in all-purpose flour.
- Sautee in vegetable oil until crispy.
- Serve with leftover gravy and other goodies.
- From away: flour, oil, S&P
#3 Gobbler Sliders

- Split leftover dinner rolls (these were rye!) and toast or warm.
- Spread with cranberry sauce.
- Stuff with turkey and leftover stuffing.
- Enjoy.
Okay, I only said three ways, but there is a fourth way to use up your leftovers.
#4 Fox-cam


- Set up trail camera.
- Place thoroughly-used up turkey carcass in view of camera.
- Enjoy.

I think Thanksgiving leftovers does just fine for a Challenge set of meals – its being resourceful, and eating locally – plus creative on top.

Jen: I bet it would be good with any meat, mashed potatoes and stuffing or even cut up leftover rolls/biscuits, etc.

We made three meals out of our turkey (and I STILL have more left). I made turkey noodle soup, hubby made his famous cajun gumbo (with turkey and some venison sausage), and then I made taquitos out of what was left of the white meat.
Your soup is similar to gumbo, except you gumbo requires a roux (rue).
OOps, I meant “except gubo requires a roux”.
